With vacation and sickness, February has come and gone too fast for me!
For my daughter's second birthday we celebrated with an Elmo theme. Today I thought I would share how we (my dad and I) made her Elmo cupcakes. I just love how they turned out!!
What did we use?
A box of cake mix
white icing (not shown)
orange icing
red sprinkles
wilton "eyes"
mini-oreos
Step 1: Follow the directions on the cake mix box for cupcakes. I found Elmo cupcake liners at Stop and Shop, so we used that.
Step 2: Once they are cool, ice the cupcakes with the white icing.
Step 3: Cut the oreos in half for Elmo's mouth. We found this to be easy with just a regular knife - although I ended up eating some them when they cracked into pieces:)
Step 4: Place the half of oreo at the bottom of the cupcake and add two eyes to the top. We found it easier to put these things on before the sprinkles. They stuck better...
Step 5: Dip the whole cupcake in a bowl of red sprinkles.
Step 6: Add Elmo's orange nose.
Add one happy Elmo fan and enjoy!!!
So cute and so easy!! I think for my daughter's 2nd bday we are going to do Minnie, but Elmo's a close second. I might do these just for fun one day!
